Crisp and rich, these little fried fish eat kinda like bacon. Pile them in a bowl as a bar snack, toss them in salad, or layer into a sandwich—and crack open a cold beer.

Fry ‘Em Up

  1. Drizzle a little oil from a can or two of anchovies into a large frying pan and heat over medium-high heat.
  2. Lift anchovies out of can(s) into pan, leaving rest of oil and the garlic nuggets in the can (they’ll spatter). Save the oil for something else, like making salad dressing.
  3. Sizzle the anchovies until they’re crisp and browned, turning once, 4-5 minutes.
  4. Remove from heat and let cool a few minutes to crisp up some more.
