Fried White Anchovies
Crisp and rich, these little fried fish eat kinda like bacon. Pile them in a bowl as a bar snack, toss them in salad, or layer into a sandwich—and crack open a cold beer.

Fry ‘Em Up
- Drizzle a little oil from a can or two of anchovies into a large frying pan and heat over medium-high heat.
- Lift anchovies out of can(s) into pan, leaving rest of oil and the garlic nuggets in the can (they’ll spatter). Save the oil for something else, like making salad dressing.
- Sizzle the anchovies until they’re crisp and browned, turning once, 4-5 minutes.
- Remove from heat and let cool a few minutes to crisp up some more.
