Caesar Salad with Air-fried Anchovies and Sourdough Cracker Croutons
We gave the Caesar salad an unexpected twist with a tin of anchovies and using our crackers as croutons. Air-frying the anchovies gives them a "grilled" taste, and our sourdough sea salt crackers work perfectly as crunchy, tangy "croutons".
INGREDIENTS
- 1 tin Patagonia Provisions Lemon Olive Anchovies
- Patagonia Provisions Organic Sourdough Sea Salt Crackers
- Lettuce of choice
- Caesar dressing of choice
- Grated parmesan, for serving
- Black pepper, for serving
PUTTING IT ALL TOGETHER
On a small baking sheet, break up 3-4 whole anchovies into small, bite sized pieces. Over the same sheet, use your hands to crumble up a few handfuls of sourdough crackers. Gently toss the anchovy pieces and crackers together, adding some oil from the tin to moisten the crackers. Air fry at 375° F for 3-5 minutes, until golden-brown and crisp.
While the crackers and anchovies cook, toss the lettuce with the dressing and plate. Top with the crispy crackers and anchovies, lots of parmesan, and black pepper.
