
Cowboy Caviar with Sardines + Beans
Justine Doiron, the recipe developer and creator of @Justine_snacks, developed this recipe for single-serving Cowboy Caviar with our Sardines + Beans: Black Beans, Corn + Salsa. All you need is some diced vegetables and chips for an easy, no-cook, protein-packed lunch that's perfect for the summer (and takes less than 5 minutes to prepare!)
INGREDIENTS:
- 1 tin of Sardines & Beans: Black Beans, Corn and Salsa
- ⅓ cup diced tomato, 75 grams
- ⅓ cup diced sweet bell pepper, 55 grams
- ¼ cup diced Anaheim pepper, 55 grams
- ¼ small avocado, 40 grams

Tortilla chips, for serving
METHOD:
Empty the tin of Sardines & Beans into a bowl, make sure to include all the liquid the beans are stored in. Add the diced tomato and peppers, mix into a “cowboy caviar” style blend.
Slice the avocado and portion it to the side of the bowl. Serve with tortilla chips!
