Patagonia founder Yvon Chouinard first tasted this mild, flavorful chile while camping out with gauchos in 1968, and finally found partners to grow it organically for us, high in the Salta province, where the altitude deepens the taste.

Aji Molido: Our signature coarsely ground organic red chile is mellow and rich, with toasty, smoky notes. It’s grown for us at 8,200 feet by our partners at Molino Cerrillos, in the mountain plateaus of northern Argentina. Terrific on grilled meat, soup, pizza, or anything else that benefits from a little kick and a lot of flavor.
Chimichurri: Inspired by a gaucho recipe that Patagonia’s founder, Yvon Chouinard, tasted more than 50 years ago, our signature spice blend gets its subtle, mellow heat from our Organic Aji Molido (ground red chile). Use the blend as a dry rub, or mix it up into chimichurri sauce.
Taco Seasoning: A zesty dried mix for any kind of taco filling, with a lively but not overpowering heat from our organic Aji Molido (ground red chile) and layers of toasty cumin and paprika. A complete seasoning, it contains salt, and tastes great on grilled meats and fish, too.
