Cucumber, Avocado & Tomato Salad with Wild Sockeye Salmon

A light, refreshing salad of fresh garden—or farmer’s market—veggies and our savory, protein-packed lightly smoked salmon. Perfect for an outdoor picnic lunch or healthy, low-carb dinner.

WILD SOCKEYE SALMON, ORIGINAL

Ingredients for 4-5 servings

  • 1 (6 oz) pkg Patagonia Provisions Lightly Smoked Wild Sockeye Salmon
  • 1 fresh cucumber 
  • 1 fresh avocado
  • 1 medium ripe fresh tomato
  • 1 fresh sweet onion
  • 2 tablespoons fresh cilantro
  • 2 tablespoons fresh green onions
  • ½ cup feta cheese crumbles
  • ¼ cup extra virgin olive oil
  • 1½ tablespoons red wine vinegar
  • ½ teaspoon dried oregano
  • 1 lime
  • Fresh ground pepper and salt

Dressing

Combine and mix -

  • ¼ cup extra virgin olive oil
  • 1½ tbsp red wine vinegar
  • ½ tsp dried oregano
  • Juice of 1 lime
  • Season with salt & pepper to taste

Salad Base

  • Dice and seed 1 cucumber into bite-sized pieces
  • Dice 1 avocado and 1 tomato into bite-sized pieces
  • Finely dice 1 sweet onion
  • Finely slice 2 tbsp cilantro
  • Finely slice 2 tbsp green onions

Putting it all together

  • Combine cucumbers, avocado, tomato, sweet onion, cilantro with ½ of dressing
  • Arrange this on a platter or bowl with Lightly Smoked Wild Sockeye Salmon
  • Finish by garnishing with green onions, feta cheese and remaining dressing
